Haymaker Bun Co.

Middlebury, Vermont

Food & Drink; Bakery, Coffee Shop

Matt and Caroline Corrente bought the defunct Lobby restaurant in Middlebury, Vermont, wanting to transform it into a multi-function space to combine their culinary passions.  The challenge was to create a space that could adapt to each business, which operate at different times of the day, allowing them to both tell their own stories.   In the early mornings, Caroline would be busy baking away, while at night, Matt would be cooking up homemade pasta.   Now, you can stop in to taste Haymaker Bun Co.’s famous buns before the space transforms into the finest modern-Italian restaurant in Vermont, The Arcadian.

“Our experience with Imhotep exceeded all of our expectations. They conceptualized a new idea for a space that already had a formed identity and reputation, and turned it into its own unique and beautiful experience. They took on the challenge of creating a concept that could work as both a neighborhood cafe in the morning, and an upscale modern Italian restaurant at night, and executed it perfectly. Imhotep’s work is complimented by our customers every single day. Their passion and creativity is unique and palpable. People are in awe of our bar, and the custom, multi-functional, butcher block table, which both serve as focal points. Jamie, Dave, Marcel, and Olivia are not just incredibly talented, they are gracious, friendly, communicative, professional, and courteous. We could not have asked for better partners to help us build our dream space. We sincerely look forward to working with them again in the future.”
